Egg Storage Refrigeration in BC: Holding the 10 to 13 Degree Standard From Cooler to Grading Station

August is when a marginal egg cooler gets found out. The condenser is working against 30 degree afternoons, the yard is at its dustiest, and every degree of drift lands in a record an auditor will eventually read.

Egg storage refrigeration in BC runs on two rulebooks. Egg Farmers of Canada's Start Clean-Stay Clean program requires registered producers to hold on-farm egg storage between 10 and 13 degrees C, keep cooler humidity at or below 85 percent, and record minimum and maximum temperatures every day. Licensed grading stations run tighter: rooms holding graded Canada A, B or C eggs sit at 10 degrees or below under CFIA rules.

What Start Clean-Stay Clean Requires From On-Farm Egg Storage

Start Clean-Stay Clean is Egg Farmers of Canada's HACCP-based on-farm food safety program. Meeting it, along with the national Animal Care Program, is how a farm earns and keeps its Egg Quality Assurance certification. Farmers need to pass every critical control element and score at least 90 percent at inspection.

The cooler requirements are specific:

  • Refrigerated storage held between 10 and 13 degrees C
  • Daily minimum and maximum temperatures recorded
  • Cooler humidity maintained at or below 85 percent
  • Thermometers calibrated twice a year
  • A fan running to keep air movement uniform
  • An emergency plan or backup generator for power outages

The program also requires daily egg gathering and bans washing eggs on farm, which puts the whole quality burden on how the cooler performs. There is no wash step to recover from a storage mistake. Cooler temperature records sit on the standard audit checklist, so a bad week in July is still visible at inspection time in November.

Grading Station Rules Are a Different Standard

Once eggs leave the farm, CFIA preventive controls for licensed egg facilities take over, and the numbers change. Rooms holding eggs graded Canada A, B or C must stay at 10 degrees C or below. Rooms holding Canada Nest Run, ungraded or dye-marked eggs get 13 degrees. Humidity stays capped at 85 percent. CFIA also expects eggs to be received into a refrigerated holding area that is physically separate from the grading area itself.

BC adds a provincial layer. The Egg Grading and Standards Regulation under the Food and Agricultural Products Classification Act requires eggs distributed in the province to be graded to federal standards, with an exemption for producers selling their own eggs directly at the farm. For those farm-gate sales, provincial guidance calls for washed eggs to be held below 4 degrees C.

Count it up and one operation can face three temperature regimes: 10 to 13 in the farm cooler, 10 or below in graded storage, and under 4 for the cartons in the farm-gate fridge. Each is a different piece of refrigeration equipment doing a different job. For producers, the point is knowing what regime your eggs enter next, so your own cooler and records line up with it.

Why an Egg Cooler Is a Harder Refrigeration Job Than a Walk-In

A standard walk-in has one job: get cold and stay cold. An egg cooler holds a narrow, relatively warm band with a humidity ceiling, and that combination trips up equipment that was never designed for it.

Start with the setpoint. Most walk-in refrigeration is built to run hard toward 2 to 4 degrees. Ask that same system to idle at 11 and an oversized unit short cycles: quick blasts of cooling, long off periods, and a temperature line that sawtooths through the day. Every peak of that sawtooth is a number in your daily max column.

Humidity is the second trap. The 85 percent cap exists to keep shells dry and mould out, but eggs also lose moisture through the shell, so air that is too dry costs you quality. Penn State Extension notes eggs held at room temperature can drop as much as one grade per day, and its storage guidance points to roughly 70 percent relative humidity as the practical zone. The coil decides this. A coil running very cold strips moisture out of the air on every cycle. A system that barely runs lets a Fraser Valley summer push humidity past the cap. Coil temperature, coil size and runtime have to be matched to the band, not borrowed from a produce cooler spec.

Then there is sweating. Room air at 25 degrees and 60 percent humidity has a dew point near 17 degrees. Move a 10 degree egg into that room and water condenses on the shell within seconds. Wet shells pick up whatever the packing room offers, and the fix is not wiping eggs. It is managing the temperature step between rooms so product never crosses the dew point, which is a design question about where doors, staging areas and pass-throughs sit.

Airflow is the quiet one. The program requires a fan for uniform air movement because still air stratifies: warm pallets near the ceiling, cold spots at the floor, and a spot check that fails even though the thermostat reads fine. Stacking product tight against the evaporator does the same damage from the other direction.

The Failure Modes That Show Up in Audits and Downgrades

The egg cooler failures we get called for cluster into a short list. Temperature drift and short cycling that daily records make permanent. Humidity creeping past 85 in July and August. Condensation at the cooler door where cold storage meets a warm packing area. Hot corners from blocked airflow. Iced coils from worn door gaskets or a defrost cycle that quietly stopped working. And the outage nobody planned for, which the program anticipates by requiring an emergency plan or backup generator.

Summer sharpens all of it. A condenser rejecting heat into a 30 degree afternoon runs longer and hotter, and a condenser coated in barn dust rejects heat badly on the best of days.   • Defrost operation verified rather than assumed
  • Thermometer calibration matched to the program's twice-a-year requirement
  • Remote monitoring with alarms, because a daily min-max log tells you about yesterday and an alarm tells you now
  • A load test on the backup power plan before an outage runs it for real
