Milk needs to be stored at just under 3 degrees Celsius to preserve its quality. For that, it first needs to be cooled from a natural temperature of 37 degrees Celsius.
This process of cooling involves removing 56 BTUs of energy from each pound of milk. At the most fundamental level, a refrigeration unit cools product by cycling through a refrigerant fluid that removes the heat from the milk and transfers it to the outside air.
Other technology to help with the heating and cooling process includes refrigeration heat recovery (RHR) and scroll or reciprocation compressors.
RHR units improve efficiency in the refrigeration process by collecting heat that would otherwise be shed to the outside and using it for water heating.
This allows the preheating of water before it enters a water heater by using the natural heat already in the milk and lowering heating costs.
A scroll compressor is a device used to compress air or refrigerant for the cooling process. It is similar to a reciprocation compressor, except it has less moving parts, which makes it more efficient.
